Need A Vegan Egg

Egg substitutions are easy because you can take just about any none vegan recipe and replace the egg with one of the following, just as you would replace milk with almond,rice, or soy milk

·         Banana
Like applesauce, bananas are naturally sweet. They also have strong binding properties when used baked goods. 1/2 banana = 1 egg
·         Baking soda/powder
When you really need your dish fluffy without extra flavor, simple baking soda or baking powder does wonders. 1 tsp baking powder + 1 1/2 tbs water + 1 1/2 tbs oil or 1 tbs vinegar + 1 tsp baking soda = 1 egg.

·         Apple Sauce
Applesauce will give off a gas while being cooked, making your baked goods fluffy. It's also doesn't require adding as much liquid as powdered replacers. 1/4 cup applesauce = 1 egg

Apple Cobbler


Ingredients:
3-4 Granny Smith apples
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. grated nutmeg
1 cup plus 1 tsp. sugar
1/2 cup (1 stick) margarine
1 cup unbleached all-purpose flour

Directions:
  1.  Preheat the oven to 350ºF. Grease a 9-inch pan.
  2. Cut the apples into thin slices; place in the pan. 
  3. Sprinkle the spices and 1 tsp. of the sugar over the apples.
  4. Melt the margarine in a medium saucepan over medium heat. 
  5. Add the flour and remaining sugar. 
  6. Cover the apples with the flour mixture.
  7.  Bake for 20 to 30 minutes or until the crust is lightly browned.

Preparation time: 15 minutes
Baking time: 20 to 30 minutes

Makes 6 to 8 servings

Energy Balls

Ingredient:


2 ripe bananas
1 cup quick oats
1/2 cup choc chips
1 heaping spoonful of natural peanut butter

Directions:

Mix well, plop spoonfuls onto baking sheet, bake at 350 for 15 mins.

Corn Rice Dessert

Ingredient:
1/2 cup sticky rice (uncooked)
2 cups water
1/4 cup coconut milk
1 cup sweet corn kernels 
3 teaspoons sugar
Pinch of salt



Directions
Rinse the rice in cold water a few times. Add to a small saucepan and pour in the water. Sprinkle in a tiny pinch of salt. Bring to a boil and let it simmer uncovered for 5-6 minutes. Stir frequently to avoid burning. it’s time to add the coconut milk. Cook for about 5 more minutes so that the rice absorbs the liquid. Stir in your corn and sugar. Continue cooking for a few more minutes), adding coconut milk as needed to achieve the right consistency.


Vegan Coconut Macaroons

























Ingredients:
§  1 cup shredded, unsweetened coconut
§  1 tbsp whatever flour you wish
§  1/2 cup plus 2 tbsp lite canned coconut milk (or full-fat)
§  4 tbsp agave or maple syrup
§  1/4 tsp coconut extract (or pure vanilla extract)
§  tiny bit over 1/16 tsp salt


Directions:
Combine all ingredients in a tall dish and microwave 3 minutes. (Or cook on the stovetop until it’s firm enough to scoop out in ball shapes.) Scoop into balls on a cookie tray (I used an ice-cream scoop) Cook at 360 F for 14-16 minutes cool before removing from tray.

No-Bake Fudgy Snow Balls

Ingredients:


·                     15 pitted dates
·                     2/3 cup unsweetened cocoa powder
·                     1 cup whole roasted unsalted almonds
·                     1 tbsp honey (agave if vegan)
·                     2 tbsp water (or more if needed)
·                     3 tbsp confectioner's sugar

Directions: 


Add almonds to your food processor  and pulse until ground. Add dates, cocoa powder, honey, and water. Mix until it forms a sticky mass. If it seems too dry, add a little water, 1 tsp at a time. Wash hands and using damp hands (keep sink running) measure 1 tbsp. and roll into a ball with the dough. Set balls on parchment paper. Put confectioner's sugar in a bowl. Roll balls in your hand and then roll in sugar. Can be stored in the fridge for up to a week.
